Summer Eating

Saturday morning breakfast. Cinnamon Oatmeal coffee cake, bacon, and pluots.

Lest you think we are vastly interesting people who have lives outside of the house, this is what we actually spend our time doing…staying at home and eating.

And because it would be rude to post food pictures without a recipe, here is one of our most recent favorite creations.  I’m guessing at the amounts I put in, so please adjust to your family’s tastes.

Chipotle Peach Marinade and Sauce

Enough to marinate chicken for 4-6 people
Puree all together in a food processor or the like:

1 very ripe peach
1/2 red onion, roughly chopped
4 garlic cloves
juice of one lime
2 T honey
1 to 1 1/2 tsp dried ground chipotle (or one chipotle in adobo)
1 tsp salt
a couple grinds of fresh pepper
1/4 to 1/2 c olive oil (or I used half avocado oil…yum!)
splash of orange juice (enough to thin it out)

I marinaded chicken in it to grill, and then heated the remaining sauce to pour over the rice I served with it. I cooked the rice in half chicken broth/half water, and added 2 T coconut oil and a couple shakes of sea salt to the cooking liquid.

Served with a salad and fruit it’s a pretty delicious dinner. I imagine it would be amazing on pork as well.
