Seriously, easiest ever. Also because there are very few dishes to wash, which in my dishwasher-less kitchen is very important. It’s a baked version of hot oatmeal. They turn out moist and delicious and just a touch tangy from yogurt.
You dump everything in the food processor, pulse a few times, pour into a muffin tin and bake.
Oatmeal Banana Muffins
Put into food processor (or blender):1 1/2 cup oatmeal 1 banana 1/2 cup yogurt 1/4 cup sugar (I used honey yogurt and skipped the sugar.) 1 egg 1/2 tsp salt 3/4 tsp baking powder 1/4 tsp baking soda a shake of cinnamon
Pulse until combined and the oatmeal is at your desired chopped-ness.
Pour into a greased muffin tin (my batch made 8 muffins). Bake at 400 degrees for 15-20 minutes.
I can’t stop thinking about the possibilities. Dropping a few blueberries into each one. Or chocolate chips. Adding some coconut and shredded carrot.
