We try to eat healthy. That means we gradually make sustainable changes to the way we eat. Someday (ha!) we may even reach these heights. But for now we are working on not buying things loaded with preservatives, eating more fruit and veges and less grains and sugar, eating healthy fats and fermented food, etc. I’m also working on is getting to know my ingredients. Reading every label and understanding the nutrition of each ingredient I put in each dish. And believe me, it’s a work in progress, we are certainly not above ordering pizza or our favorite Mexican food on a busy evening!
So these muffins were a step in weaning us off our constant sweet tooth. And they were delicious! I made them for dinner last night with grilled chicken and garlic braised green beans, and then warmed leftover muffins up and gave them to Ryan for breakfast this morning with a sides of sausages and coffee. Mmmm…morning smells at 5:30am.
Honey Applesauce Muffins (based on a recipe from thischickcooks.net)
1/2 cup honey
1/4 cup butter
2 T coconut oil
Stir in until just mixed:
1 1/2 cups white whole wheat flour
3/4 t baking soda
1/2 t cinnamon
1/2 t salt
3/4 cup unsweetened applesauce
Divide into a greased muffin tin (my batch made 8 standard muffins) and bake at 350 degrees for 20 minutes.
